As far as I know you will only have encryption if you are using SIP. That being said....
I have been able to snif and rebuild conversations if I can intercept packets between an IP phone and the MedPro. Once the traffice has moved between MedPro's the protocol changes. From the Phone to the MedPro it was H.323 which is easily reconstructed, however I lack the knowledge to do the same between MedPro's which appears to be H.248. Hope this is of some assistance . I don't believe it is encrypted, but I don't have the tools to reconstruct H.248 sessions.
