the parameter on the sys cust screen is:
Media Encryption Over IP? y

if it is on, to enable it you would go into change ip-codec-set 1. It would show up on the bottom.

I don't think it is turned on by default on 8300s. I just checked an 8300 and it is disabled, but it is enabled on the 8700 here.
