There are many more questions to answer than you have asked here and most of them require asking you questions first.
For example, your easiest question is how many IPSIs do you need. Before answering that, I need to ask what your current configuration is per switch. Are you critical reliability, or duplicated? If so, do you want to keep that or upgrade to that? Your answer will determine how many IPSIs will be needed. A standard installation is one IPSI for every five port networks per switch.
For MedPros, do you want the default TN2302 or the more capable TN2602 MedPro?
I would suggest getting with Avaya or a good Business Partner and discuss your options with them. Things they will talk about include, rack space to mount all the new components, voice mail, will your current network support IP phones, do you want the server on your LAN or separate, after a survey of all your switches what circuit packs need to be upgraded (and ones you will no longer need), what adjuncts do you have attached to the PBXs (CMS, Voice Mail, Call Accounting, NICE, etc.) and what will need to change with them. There will be more than that but this is a beginning. The vendor has the tools and expertise to do all the calculations needed after finding out what you want and plan to add.
