You could put a Night Service button on Ext. 10. Program all phones to NO ring, but add the phones that normally ring to the Night Service Group. Press NS when you want phones to ring, turn it off when you don't.

If you are also using an Auto Attendant, that followes the NS on the Partner, you must remember to swap the Day and Night menus.
