I had not seen the multi color as cat3 in anything I installed, but then I did not look for it in every carrier I put in. I only checked if the customer wanted an Ethernet device at 100M full duplex. Since that has only been recently asked for probably explains why I never saw it.
If it was sold as cat3 then the only way to verify cat5 is to look for the individually twisted pairs. Cat3 will not be twisted and if the wire is white/red it is always cat3.
